Seafood tostadas in Cancún

Why the sea tastes better on something crunchy — and how the perfect tostada is built, straight from our cold bar downtown.

August 5, 2026 · Seafood 101 · MERO 18

Some dishes demand silverware and ceremony. The tostada demands neither: a crisp round of toasted corn, ice-cold seafood straight off the bar, avocado holding the whole thing together. If you're hunting for seafood tostadas in Cancún, consider this your field guide — what separates a great tostada from a soggy one, how it's built layer by layer, and the four we serve every day at MERO 18 in the heart of downtown.

Mexico's perfect seafood delivery system

The tostada is the great democratic invention of Mexican coastal cooking. No fork, no protocol: you pick it up with your hands, finish it in three or four bites, and every one of those bites delivers what no other format manages at once — crunch against cold, toasted corn against bright citrus, texture against temperature. From a market stall to the cold bar of a sea bar, the principle never changes: the corn brings the noise, the sea brings the elegance.

It also solves a very real problem with raw seafood. Ceviche and its cousins are gloriously juicy, and the tostada turns all that juice into part of the bite instead of leaving it stranded at the bottom of the bowl. That's why in Mexico ceviche almost never travels alone — and if you want to understand that whole family properly, we mapped it out in Ceviche, Aguachile or Tiradito?

Anatomy of a great tostada

It looks simple — which is exactly why it forgives nothing. A proper seafood tostada is built in layers, and every layer has a job:

And one golden rule that holds in every marisquería on earth: eat the tostada the moment it lands. This is a dish on a timer — with every passing minute, the base loses its battle against the juice.

The four tostadas on our menu

At MERO 18 the tostada section is short on purpose: four of them, each with its own personality, all built with the day's product from our cold bar.

Conch tostada — $200 MXN

The most Caribbean of the four. Conch — caracol — is an emblem of this region: firm, subtly sweet, with a clean ocean flavor unlike anything else, and the tostada shows off its texture better than any other format. If conch intrigues you, we also serve it in aguachile negro, the dish our reviews can't stop talking about.

Salmon tostada — $190 MXN

The elegant one. Cold salmon with fresh accompaniments that let it shine — the tostada that sushi lovers tend to order first, crossing the bridge from one raw-fish language to another.

Tuna tostada — $190 MXN

The house favorite, and the short answer to "which one should I start with?" Fresh tuna with avocado, a mayo with a spicy edge, and crispy fried leek adding a second level of crunch on top of the base. Textbook balance.

Shrimp tostada — $170 MXN

The gateway tostada: cold, fresh shrimp, straightforward and satisfying, at the friendliest price in the section. Perfect for opening your appetite before a longer crawl through the cold bar.

All four live on the full menu, alongside oysters, ceviches, tiraditos and sushi rolls.

Where to eat seafood tostadas in Cancún

Honest answer: in more than one place, and we're glad that's true. Downtown Cancún has a real seafood culture — beloved local spots like El Fish Fritanga and Los de Pescado have been feeding locals for years, and at Mercado 23, stalls like El Cejas are part of the city's folklore. If you have a few days here, the crawl is worth it.

Ours is the sea-bar take on that tradition: a cold bar in plain sight, product that arrives daily, oysters shucked to order and a catch of the day that changes with whatever the boats bring in. A tostada here doesn't come off a tray — it's assembled when you order it, with the seafood at exactly the right temperature. And if the tostada leaves you wanting more raw seafood, our guide to the best ceviche in Cancún will show you where the journey goes next.
